Apple Cinnamon Muffins + the ordinary geniuses among us

It’s been one month since I stepped into the bylanes and busy congested highways of blogging. Sometimes I feel it’s a foolish pursuit- does the world really need one more blogger yakking away about cakes , cupcakes and other mundane things ? Yet sometimes it feels great to know that there are a few pairs of eyes which do follow and find my stories interesting.

But amidst all this blogging cacophony I discovered something supremely interesting. That being ,there are people out there who sit alone in a corner of their rooms and with much painful soul searching, conjure up captivating ideas and analogies. Some of them are fairly well known writers , some struggling to be well known and some who enjoy writing in the comfort of anonymity. Everybody needs a gentle push, an affirmation or an approval, right? We would all perish a little without it. As an extension of my love for reading, and also as a seal of admiration for these ordinary geniuses, I have decided to start a new category on my blog called Impressive Reads where I will reblog those posts that I feel are brilliant and thought -provoking. Folks,if you love to read and introspect, I am sure you will find more than just a dime or a penny here. Something more along the lines of a pearl, or even a rhinestone. Lessons for a lifetime.

So, back to my purpose for living – baking! I am sharing with you a recipe for Apple Cinnamon Muffins. It has a crumble topping to go with it, but in fact the muffin itself tasted so good, that I think you could skip the crumble topping altogether and not even miss it. But if you are certain that you want it, you could choose your favourite recipe for a crumble topping and add some cinnamon to it. The texture of the muffin is soft, moist and studded with soft apple chunks, , and very cinnamon-y; just the way I like it. For those who like their muffins to be on the not -so-sweet side, you could cut back on three to four tablespoons of sugar. The brown sugar lends an irresistible caramel flavour to the muffin, so do try to use  brown sugar. Apart from preparing the apples, there’s not much effort involved in making this. Do try this, I am sure you will love it too!

Apple Cinnamon Muffins

Makes 12 muffins

Ingredients

1 cup all purpose flour

1/2 cup whole wheat flour

1/2 cup granulated white sugar

1/2 cup brown sugar, packed

1/2 teaspoon salt

2 teaspoons baking powder

2 teaspoons ground cinnamon

1/3 cup vegetable or canola oil

1 large egg

1/3 cup milk

2 medium apples, peeled, cored and chopped

Method

1. Preheat oven to 400 F. Grease a 12 cup muffin tin or line with paper muffin liners.

2. In a medium bowl whisk together dry ingredients. Add oil, egg and milk and stir until just combined. Fold in apples. Divide batter between the 12 muffin cups.

3. Bake 15 to 20 minutes, or until a toothpick inserted in centre of muffin comes out clean.
